Untreated garlic in oil belongs in the refrigerator or freezer
Homemade garlic in oil that has not been acidified by a tested method must not be stored at room temperature. Make it fresh, refrigerate it at 40°F (4°C) or below, and use it within four days—or freeze it for longer storage. Label the container with the preparation date and the four-day use-or-freeze date. If its time or temperature history is uncertain, discard it without tasting.
That rule covers the ordinary jar made by combining fresh garlic and oil. It also applies to homemade flavoured oils and oil-rich mixtures such as pesto unless you have followed a tested preservation procedure that specifically covers the ingredients and method. Oil is not a preservative for moist garlic.
This is not a quality preference. The National Center for Home Food Preservation (NCHFP) says research confirmed a botulism risk in garlic-in-oil mixtures kept at room temperature. Oregon State University Extension identifies garlic as a low-acid vegetable and says raw, untreated garlic must not be stored in oil on the counter.
Why garlic and oil create a botulism risk
Garlic can carry spores of Clostridium botulinum. The bacteria can produce botulinum toxin under the right conditions. Garlic contributes moisture and low acidity; oil limits oxygen. Room-temperature storage adds the warmth that lets this combination become dangerous.
The container does not need to look spoiled. A normal smell, colour or taste cannot prove that the food is safe. Do not taste a questionable batch. Botulinum toxin attacks the nerves, and the resulting illness can weaken muscles used for breathing.
The risk is serious even though botulism is uncommon. CDC has documented outbreaks linked to improperly preserved foods, including an earlier outbreak associated with commercial chopped garlic in oil. The practical response is not to estimate the odds at the kitchen counter. It is to control time, temperature and preservation method every time.
Choose one of three safe storage paths

Do not combine these paths. Refrigerating an untreated batch for four days does not make it suitable for later room-temperature storage. Freezing does not acidify it. Adding a splash of lemon juice does not convert a fresh recipe into the tested acidification process.
Path 1: make a small refrigerated batch
For untreated garlic in oil, NCHFP’s rule is exact: make it fresh, keep it at 40°F (4°C) or below, and store it for no more than four days.
Use a clean food-grade container with a sound lid. Prepare only the amount you expect to use within the limit. Put it in the refrigerator promptly rather than leaving it beside the stove to “cool” or infuse. Write two dates on the container:
- the date and time it was made;
- the date four days later by which it must be used or frozen.
Keep the refrigerator at or below 40°F (4°C), verified with an appliance thermometer. Do not rely on how cold the jar feels. Do not repeatedly bring the whole container to the table; portion out what you need with a clean utensil and return the rest to refrigeration.
The four days are a maximum, not four days after you remember the jar. Count from preparation. Discard leftovers when the limit is reached. Heating an old or mishandled mixture is not a substitute for following the storage rule.
Oregon State’s broader guidance applies the same four-day refrigeration-or-freezing boundary to homemade flavoured oils, including pesto. A recipe’s salt, cheese, nuts, herbs or roasted ingredients do not authorize a longer hold unless a tested source specifically says they do.
Path 2: freeze for a longer hold
Freezing is the straightforward option when four days is not enough. NCHFP says garlic in oil may be frozen for long-term storage for up to several months. It specifies glass freezer jars or plastic freezer boxes, one-half inch of headspace, and a label and date.
Divide the mixture into amounts you will use at one time. A smaller package reduces the temptation to thaw and refreeze the same batch repeatedly. Leave the specified headspace, close the container, label it clearly as garlic in oil, add the freezing date, and freeze it promptly.
Oregon State Extension also publishes a specific freezer method using two parts oil to one part peeled garlic purée. Its instruction is to freeze immediately and not hold the purée at room temperature. Use that exact ratio only for that cited freezer method; it is not an acidification ratio and it does not create a shelf-stable product.
Do not move a frozen garlic-oil mixture to the pantry. Use cold handling and the thawing directions that accompany the tested recipe you followed. When the source does not provide a thaw-and-refreeze cycle, portioning before freezing is the cleanest plan.
Path 3: use the complete tested acidification method
Room-temperature storage requires a preservation control, not a guess. Pacific Northwest Extension publication PNW 664 gives a research-based method for acidifying garlic before it is added to oil. The process uses a 3 percent citric-acid solution, a defined garlic-to-solution ratio, coarsely chopped pieces no larger than one-quarter inch in any direction, and a 24-hour soak at room temperature.
Those details work together. The publication states that a weaker acid solution or shorter soak can produce an unsafe result. It also says:
- lemon juice and vinegar were not tested as substitutes for citric acid;
- ascorbic acid, or vitamin C, is not interchangeable with citric acid;
- whole garlic cannot replace the specified chopped garlic because it acidifies too slowly;
- the method covers garlic, basil, oregano and rosemary, not an open-ended list of vegetables and herbs;
- garlic and herbs use different acidification ratios, so garlic must be acidified separately.
This article deliberately does not turn that process into a shortened recipe card. Open PNW 664, Making Garlic- and Herb-Infused Oils at Home, read the complete current procedure, and follow its ingredient, size, ratio, soaking and storage directions exactly. Do not scale from memory, substitute acids, add untested ingredients or use a home pH strip to redesign the method.
If you cannot follow every part of the tested procedure, use the refrigerated four-day path or freeze the mixture. There is no need to improvise a shelf-stable version.
Commercial garlic oil follows its own label
Commercial garlic oils may use validated acidification or microbial inhibitors. That does not make every unlabelled bottle or homemade gift equivalent to a commercial shelf-stable product.
Read the package before buying and again after opening. Follow its room-temperature or refrigeration direction and its after-opening period. Pacific Northwest Extension advises checking the label or asking a boutique or small-scale producer whether the required safety treatment was applied.
If a product arrives without an intact label, storage instructions or a way to identify the producer, do not infer a process from its appearance. A decorative bottle containing visible cloves is not evidence of acidification. When the treatment and storage requirement cannot be verified, do not use it.
These shortcuts do not establish safety
“I cooked or roasted the garlic first”
Ordinary cooking is not the PNW 664 acidification process. Unless a current tested recipe specifically validates the finished garlic-oil product and its storage, treat it as a refrigerated four-day food or freeze it. “I used dried garlic”
PNW 664 says home cooks cannot confirm with ordinary kitchen equipment that dried garlic or herbs contain too little moisture for bacterial growth. It directs dried garlic-and-oil mixtures to refrigeration and use within four days or to freezing.
“I added vinegar, lemon juice or extra salt”
PNW 664 specifically says vinegar and lemon juice were not tested as substitutes for citric acid in its infused-oil process. A casual amount of acid or salt does not validate a different recipe.
“The lid is tight and the oil covers everything”
A tight lid and full oil coverage do not solve the problem. The low-oxygen environment is part of the risk. Container appearance cannot replace time, temperature or tested acidification.
“It smells fine”
Smell and taste are not safety tests for botulinum toxin. Do not sample suspect food. When a homemade batch has exceeded the limit, sat at room temperature, or lost its label, discard it.
Keep garlic storage categories separate
Whole, cured garlic is not handled like garlic submerged in oil. Sound cured bulbs belong in a cool, dry, ventilated place according to the storage guidance for the cultivar. Peeled, chopped, cooked and oil-covered garlic each have different holding requirements.

Keep recipes labelled so another person in the household can tell which path was used. Include the oil when checking ingredient allergies, especially if a nut or seed oil is involved. A storage label should never make an allergy claim that the ingredients and preparation area cannot support.
If someone may have botulism symptoms, act immediately
CDC lists difficulty swallowing, muscle weakness, double or blurred vision, drooping eyelids, slurred speech, difficulty breathing and difficulty moving the eyes among common botulism symptoms. Foodborne botulism may also involve nausea, vomiting, stomach pain or diarrhoea. A person may not have every symptom.
Botulism is a medical emergency. If symptoms occur after eating a potentially unsafe food, immediately see a doctor or go to an emergency department. Do not wait for more symptoms and do not attempt home treatment. Tell the clinician what was eaten and when.
Do not serve the remaining food or taste it again. Keep other people away from it. Follow instructions from medical and public-health professionals about the suspect container; do not transport it casually or open it for inspection.
Use the rule you can follow every time
For most home kitchens, the simplest plan is the safest one: make a small batch, refrigerate it immediately at 40°F (4°C) or below, label it, and use or freeze it within four days. Freeze portions when you want a longer hold.
Choose room-temperature storage only when you are willing to follow the complete tested PNW 664 acidification procedure without substitutions. Oil, heat, a tight lid and a pleasant smell do not replace that process.
